Wildschönau beetroot soup

Recipe for 4 persons

  • 500g beets
  • 150g butter
  • 150g onions
  • 250ml cream
  • 250ml Soup
  • 1 dash of sweet white wine
  • Salt, pepper, nutmeg

Cooking steps

  1. Clean, peel, wash and cut the turnips into cubes or diamonds and finely chop the onions.
  2. Heat the fat in a pan and sauté the turnips and onions in it.
  3. Add the white wine and soup. Season to taste with salt, pepper and nutmeg and simmer for approx. 20 minutes.
  4. Blend with a hand blender and add the cream.
  5. Season to taste again and thicken slightly with cornflour if necessary.
