Wildschönau pretzel soup

Recipe for 4 persons
- 8 light soup pretzels, without salt
- 1 liter beef broth, salt
- 150g spicy grated cheese (Räß, mature mountain cheese, or gray cheese)
- 80g butter
- 1 medium onion
Cooking steps
- Cut the pretzels into 1 cm wide pieces, pour hot beef broth over them, cover, and let soak.
- Layer the pretzels and cheese in a baking dish. Sauté the finely chopped onion in butter until light yellow and pour over the top.
