"Brodakrapfen"

Recipe for 4 persons

For the dough
  • 250g wheat flour
  • 250g rye flour
  • 1/4 liter hot water
  • 60g butter
  • Salt
For the filling
  • 500g “Broda” (curd cheese)
  • Salt, pepper, chives
  • grated Zieger cheese (alternatively, fatty gray cheese)
  • Cream for mixing
For baking
  • sufficient sunflower oil or clarified butter

Cooking steps

  1. Add salt to the flour, knead with melted butter and hot water to form a dough. Note: It should not be too soft. Let rest for approx. 15 minutes.
  2. Mix all the ingredients for the filling together well.
  3. Shape the dough into a roll, cut off small pieces, roll them out into ovals, and fill them with the filling. Press the edges together firmly. Finally, finish them off nicely with a dough border.
  4. Fry in hot fat. The filling must be nicely melted.
