"Schmalznudeln"

Recipe for 6 persons

  • 500g plain wheat flour
  • 1 teaspoon salt
  • 1 packet dry yeast
  • 1 teaspoon sugar
  • 1/8 to 1/4 liter lukewarm milk
  • 2 teaspoons melted butter or sunflower oil
  • 2 eggs
  • A little rum
  • Clarified butter or good sunflower oil for baking

Cooking steps

  1. Beat all the ingredients well to form a dough, cover and leave to rest for 30 minutes.
  2. Make round dumplings on a floured work surface and leave to rise again for 30 minutes.
  3. Pull out from the center to form a hollow and fry in hot fat.
  4. Cabbage, bean soup or cranberry jam go perfectly with "Schmalznudeln".
