Wildschönau beetroot soup

Recipe for 4 persons
- 500g beets
- 150g butter
- 150g onions
- 250ml cream
- 250ml Soup
- 1 dash of sweet white wine
- Salt, pepper, nutmeg
Cooking steps
- Clean, peel, wash and cut the turnips into cubes or diamonds and finely chop the onions.
- Heat the fat in a pan and sauté the turnips and onions in it.
- Add the white wine and soup. Season to taste with salt, pepper and nutmeg and simmer for approx. 20 minutes.
- Blend with a hand blender and add the cream.
- Season to taste again and thicken slightly with cornflour if necessary.
