Wildschönau pretzel soup

Recipe for 4 persons

  • 8 light soup pretzels, without salt
  • 1 liter beef broth, salt
  • 150g spicy grated cheese (Räß, mature mountain cheese, or gray cheese)
  • 80g butter
  • 1 medium onion

Cooking steps

  1. Cut the pretzels into 1 cm wide pieces, pour hot beef broth over them, cover, and let soak.
  2. Layer the pretzels and cheese in a baking dish. Sauté the finely chopped onion in butter until light yellow and pour over the top.
